In the young plant, the absorption of minerals and water occurs through the root hairs. On this image root hairs are a hard to see, but they are there.

In some species as the root ages, mineral and water absorption is largely taken over by the mycorrhiza. Mycorrhiza are an association formed between the root and various soil fungi.
